Ursprünglich kommt der Lavendel von den felsigen, trockenen Berghängen rund ums Mittelmeer. Jetzt wächst er auf riesigen Feldern und bestimmt das charakteristische Bild der Hoch-Provence.
Die Pflanze findet seit dem Mittelalter Verwendung als Zierpflanze und als Duftmittel. Lavendel (lavandula angustifolia) gehört zu der Familie der Lippenblütler (lamiaceae) mit einer Wuchshöhe bis zu 1 Meter. An seinen langen, schlanken Stängel wachsen grausilbrige, lanzettenförmige Blätter und an ihren Enden die kleinen, lavendelfarbige Blüten, die in Scheinquirlen angeordnet sind. Die Blütezeit ist im Juli bis zum August. Geerntet werden die Blüten am frühen Morgen, wenn sie sich gerade öffnen. Man schneidet sie mit den Stängeln ab und trocknet sie.
